This Okinawa Fair, Chef Rio stays true to tradition, showcasing 3 well-known Okinawa dishes and ingredients, the Goya (bittergourd) tempura with Umibudoh (sea grapes), Rafute infused with Awamori and ending things on a sweet note with Sata Andagi.
